These little peanut butter balls are something I make at least every couple of weeks to take to the office and help me resist the urge to dive headfirst into the communal biscuit tin at 3pm (granted those days seem like years ago now we’re currently in lockdown). Although they’re not very aesthetically pleasing, they taste amazing, are really easy to make and are a good alternative to more sugary snacks if you need a quick energy boost.
3/4 cup of peanut butter (I use a teacup)
1/2 cup of honey
1 1/4 cup of rolled oats
1/4 cup of ground flax seeds
1/4 tsp salt
1/2 tsp ground cinnamon
1/2 cup of raisins
1 – Put the peanut butter and honey a large bowl, pop in the microwave for 40 secs on high to soften
2 – Add the rest of the ingredients and mix until well combined
3 – Let the mixture chill in the fridge for an hour
4 – Roll into 1″ balls and place on baking paper
5 – Leave to set in fridge.
*keep in an airtight conditioner in the fridge for up to one week.
